====== Bean Patties ====== Makes 9 patties. * 2 cans beans (1 black, 1 red), drained, rinsed, and patted dry * 2 medium onions, finely chopped * 1 bell pepper, finely chopped * 3 garlic cloves, finely chopped * 1/3 cup brown quinoa, cooked * 2 tsp garlic powder * 2 tsp smoked paprika * 1 tsp nutritional yeast * 4 tbsp chickpea flour * 2 tbsp tomato paste * 200g smoked tofu, finely cubed * 2 tbsp chia seeds Prep beans: reserve the aquafaba from one of the cans (choose the thicker one). Wash and dry the beans, then bake at 180 C for 15 minutes. In the meantime, cook the quinoa. Also fry onion until golden, add garlic and pepper, fry until soft. Place beans in a bowl and mash until creamy but still chunky. Add the rest of the ingredients - adjust consistency with extra water, chia seeds or chickpea flour. Form into patties and bake at 220 C for 30 mins, flipping halfway.
