====== Chickpea "Egg" Salad ====== * 1 can of chickpeas, drained * 1/2 cup vegan mayo * 2 tbsp whole grain or dijon mustard * 1/4 tsp black salt, finely crushed * 1 small onion, finely diced * 3 pickles, finely diced * a bunch of chives, chopped * salt, pepper and pickle juice Mash the majority of the chickpeas well. Add onion, chives and pickles, and season with pepper, a dash of pickle juice and mustard. Mix well and let sit for a few minutes. Mix in mayo and season with black salt plus normal salt as needed.
