Makes 9 patties.
Prep beans: reserve the aquafaba from one of the cans (choose the thicker one). Wash and dry the beans, then bake at 180 C for 15 minutes.
In the meantime, cook the quinoa. Also fry onion until golden, add garlic and pepper, fry until soft. Place beans in a bowl and mash until creamy but still chunky. Add the rest of the ingredients - adjust consistency with extra water, chia seeds or chickpea flour.
Form into patties and bake for 30 mins, flipping halfway.
