Frijoles Negros

  • 500g dry black beans
  • 4 medium onions, chopped
  • 5 green peppers, chopped
  • 4 bay leaves
  • 1/2 tsp turmeric
  • 3 tsp oregano
  • 2 tsp ground cumin
  • 1 tsp ground coriander seed
  • 2 tsp garlic powder
  • 1 tsp sugar
  • salt to taste (1-2 tsp)
  • 1 tsp white wine vinegar
  • 1 can chipotles in adobo sauce (La Costeña) (optional)

Soak beans overnight, drain and wash well. In a pressure cooker, saute onions and peppers. Add the beans and add water until just covered. Add seasonings except salt and vinegar. Seal the pressure cooker and let it come to pressure, then cook for 35 minutes. Allow pressure to release. If you have chipotles, blend them along with a cup of the beans then mix them in. Season with salt and vinegar.
