Bean Pate

  • 1 cup dry white beans
  • 4 medium onions, minced
  • 8 cloves garlic, roughly chopped
  • 2 tbsp tomato puree
  • 4 tbsp soy sauce
  • 1 1/2 tbsp worcester sauce
  • 1 tbsp dried oregano
  • 1 tbsp dried chives
  • 4 sundried tomato slices
  • 1 spring onion
  • juice of 1/2 a lime

Soak beans for at least 8 hours. Drain, replace water, and cook until very soft.

Saute onions until they begin to brown, then add garlic and cook until lightly caramelized. Add tomato puree and cook until mixture lightens. Add soy sauce, worcester sauce, oregano and chives. Cook for 2 minutes.

Mix sauce, drained beans, tomatoes and lime juice. Blend using a stick blender until smooth. Add finely chopped spring onion.
