Makes 1 large ball or 3 small ones.
Prep ahead by soaking your raw cashews in boiling water, overnight is best but 2-4 hours is sufficient enough. Blend ingredients (minus the cranberries & pistachios) using a stick blender. Scoop mixture into an appropriately sized bowl or bowls and shape roughly. Chill in the fridge for 1-2 hours (or freezer if in a hurry). Remove from the fridge, carefully shape into balls or mounds and roll in a mixture of dried cranberries and crushed pistachios, until completely covered. Serve immediately or chill until serving.
