Cashew Cheese

Makes 1 large ball or 3 small ones.

  • 1 1/2 cup raw cashews, soaked 2-4 hours
  • 1/8 cup nutritional yeast
  • 2 tbsp coconut oil, solid
  • 1/4 cup lemon juice
  • 2 tsp herb butter seasoning mix
  • 1/3 cup pistachios, crushed (to coat)
  • 1/3 cup dried Cranberries, roughly chopped (to coat)
  • 1 tbsp cashew cream, as needed to blend (sub water)
  • pinch of salt

Prep ahead by soaking your raw cashews in boiling water, overnight is best but 2-4 hours is sufficient enough. Blend ingredients (minus the cranberries & pistachios) using a stick blender. Scoop mixture into an appropriately sized bowl or bowls and shape roughly. Chill in the fridge for 1-2 hours (or freezer if in a hurry). Remove from the fridge, carefully shape into balls or mounds and roll in a mixture of dried cranberries and crushed pistachios, until completely covered. Serve immediately or chill until serving.
