Leek soup

  • 4 medium onions, chopped
  • 5 cloves of garlic, crushed
  • 1 tsp caraway
  • 0.5kg potatoes, cut into small cubes
  • 3 leeks, cut into thick slices
  • 1 Alpro rice cooking cream
  • 3 tbsp nutritional yeast
  • 2 bouillon cubes
  • dash of pepper

Lightly fry onions in a generous portion of olive oil. Add crushed garlic and fry briefly. Add caraway, pepper, yeast, potatoes and leeks. Add water until barely covered, season with salt. Cook until potatoes and leeks are just soft. Add cream and blend with a stick blender to desired consistency.
