Turmeric Garlic Rice

  • 1 1/2 cup jasmine rice
  • 4 medium onions, diced
  • 1 large bulb garlic, finely chopped
  • 5 carrots, finely diced
  • 1 bell pepper, finely diced
  • 1 package smoked tempeh, diced
  • 1 package firm tofu, diced
  • 1 can corn
  • 3 tsp turmeric

Cook the well-washed rice and let it steam off. The goal is to have rice that's not very sticky and not overcooked. Ideally use rice that's a day old.

Fry onion until nicely browned. Add garlic, fry until soft. Reserve.

Fry carrots and pepper until soft. Add tempeh, tofu, corn and the reserved onions with garlic. Mix well. Add rice, turmeric and salt. Mix well, adjust seasoning.

Serve topped finely sliced green onions and/or fried onions.
