Chickpea "Egg" Salad
1 can of chickpeas, drained
1/2 cup vegan mayo
2 tbsp whole grain or dijon mustard
1/4 tsp black salt, finely crushed
1 small onion, finely diced
3 pickles, finely diced
a bunch of chives, chopped
salt, pepper and pickle juice
Mash the majority of the chickpeas well. Add onion, chives and pickles, and season with pepper, a dash of pickle juice and mustard. Mix well and let sit for a few minutes. Mix in mayo and season with black salt plus normal salt as needed.
