Chickpea "Egg" Salad
1 can of chickpeas, drained
1/2 cup vegan mayo
2 tbsp whole grain or dijon mustard
1/4 tsp black salt, finely crushed
1 small onion, finely cubed
3 pickles, finely cubed
a bunch of chives, chopped
salt, pepper and pickle juice
Mix chickpeas, mayo, mustard and black salt in a bowl, mashing the majority of the chickpeas lightly. Add onion, chives and pickles, mix well and season with salt, pepper and dash of pickle juice.
