Chickpea "Egg" Salad

  • 1 can of chickpeas, drained
  • 1/2 cup vegan mayo
  • 2 tbsp whole grain or dijon mustard
  • 1/4 tsp black salt, finely crushed
  • 1 small onion, finely diced
  • 3 pickles, finely diced
  • a bunch of chives, chopped
  • salt, pepper and pickle juice

Mash the majority of the chickpeas lightly. Add onion, chives and pickles, and season with pepper, a dash of pickle juice and mustard. Mix well and let sit for a few minutes. Mix in mayo and season with black salt plus normal salt as needed.
